With over thirty years of restaurant experience, Arsalan Turkzadeh is the owner of Tahdig Kitchen, iHeart Pancakes, and Mustard's Cafe. Food is his life, and he has always found a unique way at redefining the classics. He is also a proud Persian, having grown up with traditional Persian cuisine his whole life. This pride for his cultural roots and love of finding new ways to make traditional meals modern has led him to creating Tahdig Kitchen, where thousands of years of flavor meet modern style.

Allen Rahmani is a master restaurateur forged by over four decades of hospitality and Persian culinary leadership. As the founder of Kimia Kitchen and Kimia Food, he commands FDA-approved production facilities that serve over 1,000 guests daily and supply private-label Persian products to major brands and elite markets across Southern California. Allen has powered large-scale catering operations, national restaurant supply chains, and high-volume production, all without sacrificing authenticity. He forms the operational backbone of Tahdig Kitchen, ensuring every dish reflects the disciplineand heritage of a true culinary empire.
